The weather is sunny, the air is salty and mangoes are in season; and there’s no better way to take advantage of all the mangoes available now in Mombasa, by making smoothies and of course, ice cream. It’s a very tasty, yet healthy way to make ice cream for your loved ones using very few ingredients; so let’s get started!
You will need:
Sweet condensed milk
Whip cream or full cream milk
Mangoes (or any fruits you prefer)
Blender/ Cake Mixer
Tip to remember: I always prefer putting my mixing bowl inside the fridge; basically all the ingredients just to make sure they are nice and cold before I get started.
Peel the mangoes, and cut them in cubes then freeze them for about 6 hours or overnight.
When the mangoes are cold and frozen, put them in a blender with a bit of sugar until it forms a mango purée.
You can use the same method with any kind of fruit you prefer. In your mixing bowl, mix the whip cream and condensed sugar, until it has a nice thick consistency. Pour in your mango purée and whip it up a bit, and then add a few drops of vanilla extract or gelatin if you prefer.
The reason why I add vanilla essence to the ice cream base is to help it hold since it contains alcohol, and it will help the ice cream not to crystalize as such. Place the ice cream in the freezer overnight, and voila! There you have it, your home made mango ice cream!
